stuffed bitter gourd/kakarakya


Ingredients:
7-8 bitter gourd small
1/4 cup roasted channa dhal,
4 tbs coriander seeds,
2 tsp cumin seeds,
6 garlic cloves,
4-5 red chillies,
1 medium onion finely diced,
salt to taste ,
oil for frying
Method:
  • cut the edges off the bitter gourd and make a slit in the center leaving the ends intact.
  • carefully remove the seeds using the back of a spoon and reserve aside.
  • Bring a pot of water to boil and add the bittergourd.promptly take them out within 2 mins and keep aside.
  • Take a heavy bottomed pan and head 2 tbs of oil .To this add diced onion and fry till golden and add the reserved seeds taken out of the bitter gourd.Add little salt and cook thoroughly.
  • Meanwhile make a powder of roasted channa dhal,coriander , cumin seeds, red chilies,salt and garlic.
  • Add this powder to the cooked onion and bitter gourd.Fry for about a minute and let it cool.
  • Stuff this mixture into the hallowed bitter gourd.
  • In a large pan take oil enough for shallow frying and carefully place the stuffed bitter gourds and fry them evenly on all sides.
  • Enjoy with hot rice and ghee.

I thought its a Great thinking to stuff bitter gourd with spices and cook. But after a few comments here , I realise its one of the favourites of them which means I am not even aware of this recipe all these days.

was little doubtful about how it would be but ur picture is too good and sure it tastes the same way.
