Ingredients:
7-8 bitter gourd small
1/4 cup roasted channa dhal,
4 tbs coriander seeds,
2 tsp cumin seeds,
6 garlic cloves,
4-5 red chillies,
1 medium onion finely diced,
salt to taste ,
oil for frying
Method:
- cut the edges off the bitter gourd and make a slit in the center leaving the ends intact.
- carefully remove the seeds using the back of a spoon and reserve aside.
- Bring a pot of water to boil and add the bittergourd.promptly take them out within 2 mins and keep aside.
- Take a heavy bottomed pan and head 2 tbs of oil .To this add diced onion and fry till golden and add the reserved seeds taken out of the bitter gourd.Add little salt and cook thoroughly.
- Meanwhile make a powder of roasted channa dhal,coriander , cumin seeds, red chilies,salt and garlic.
- Add this powder to the cooked onion and bitter gourd.Fry for about a minute and let it cool.
- Stuff this mixture into the hallowed bitter gourd.
- In a large pan take oil enough for shallow frying and carefully place the stuffed bitter gourds and fry them evenly on all sides.
- Enjoy with hot rice and ghee.
